Postpartum Punch
About one part each of:
Orange juice, cranberry juice, and lemon lime soda.
Pour over ice, give it a stir, taste and add more of something if you like.

Chunky Guacamole & chips:
Use a guacamole seasoning packet with two mashed avocadoes.
Add 1-2 more
or two more avocadoes roughly smashed and stir.
Add in 1-2 chopped tomatoes.
Add
1/4 to 1/2 of one chopped yellow onion.
Stir.
Eat with your favorite chips or as a topping on other healthier food items.

Cowboy salsa
Combine one chopped bell pepper of each color
One Yellow onion chopped
One drained can of white shoepeg corn
One drained can of black eyed peas
Add a small bottle of italian dressing, stir together
Serve with tortilla chips

Toby's Salsa
One huge can of whole peeled tomatotes.
Lots of salt and freshly ground pepper (to taste).
Red pepper flakes to taste.
Lots of cilantro (start with a handful and add more if desired).
Tabasco to taste (a few shakes should do it).
Combine ingredients in a blender until smooth.
Add more spices
if desired.
Add one half to one Coarsely chopped yellow onion and stir.
Add more diced
tomatoes for chunkiness if desired.
Blend for a few seconds if desired or leave
chunky.
Serve with tortilla chips.

Yummy dessert, semi-low carb (Rachael Ray
gets the props)
Cut strawberry tops off, cut in half and put in bowl
Break a dark chocolate bar (I like Cadbury) on top
Microwave for 1 min. 30 seconds
Stir, cool
Add whipped cream if desired and eat with a spoon

Easy yummy japanese chicken vegetable and egg drop soup
Make japanese chicken soup or ramen noodles from a package,
add an egg during cooking and stir around, add microwaved
or thawed frozen peas near end of cooking time (3 minutes)

Easy tortilla soup (Props go to Belinda Pool of Dallas) (is
chicken ok?) you can leave out the chicken and just add lots
of avocado at the end if you like
Combine cans of the following:
Ranch style beans
Rotel mexican style tomatoes (or regular canned diced tomatoes
for the spice hater)
Corn (undrained)
Chicken broth
French Onion Soup
and
One cup water
1/4 cup rice
Simmer about 30 minutes
Add either one can chicken or your own grilled chicken, you
can also use the Tyson grilled chicken from a bag
Place tortilla chips and shredded cheese in bowl, pour soup
over, place more chips and cheese on top if desired, garnish
with sliced avocado (the best part)

Pasta Putanesca (easy, Martha Stewart gets credit)
In a large pan heat olive oil (EVOO as Rachael Ray would
say), chopped garlic (1-2 cloves), red pepper flakes (just
enough
to lightly sprinkle over the size of the pan. Careful not
to burn the garlic When you start to smell the garlic toasting,
add about 1-2 T of rinsed capers, then drain some sliced
olives
from a small can and add those in. Finally, add one can (or
more if you like) diced tomatoes and stir. Heat through and
serve over your favorite fresh hot pasta.

Sinful Spinach Mushroom and Chicken Pasta (shrimp can be
substituted or leave out protein portion altogether)
In a pan sautee with olive oil, garlic, salt and pepper,
and italian herbs and spices: Fresh chopped chicken breast
meat,
chopped onions and sliced mushrooms.
Make an alfredo sauce in another pot or use canned alfredo
sauce
Cook your favorite pasta, during the last 1-2 minutes of
cooking, add at least one package of fresh baby spinach and
stir into
pasta. Drain spinach and pasta together in colander.
Add fresh chicken and veggies and top with alfredo sauce

Yummy "Salad Bar" Salad
Fresh baby spinach or baby field greens, sliced hard boiled
eggs, cubed cheddar or american cheese (easy to do this with
a deli stack of sliced cheese, then it breaks up easily for
little kids), strips of red onion, any color bell pepper,
thawed frozen peas, tomato wedges, and if desired, mushrooms
or whatever
other favorite salad veggies - add your favorite dressing

Warm Spinach and Tomato Salad
Toasted walnuts
Raspberry Balsamic Vinigarette Dressing or Balsamic Vinigarette
Dressing mixed with brown sugar
Baby Spinach
Tomato Wedges
Goat Cheese
Combine Spinach, Tomatoes, and Dressing and microwave 15-30
seconds or until dressing, spinach, and tomatoes are warm
but not hot. Add toasted walnuts on top and sprinkle with
goat
cheese sparingly
